Gluten Free, Fluffy Pancake Mix

You won't be able to tell the difference between these pancakes and the ones you would get full of gluten! They cook up nice and fluffy, tasty and filling. One package makes 12 four inch pancakes. All you need to do is add an egg, some milk (DF works great) and oil (avocado oil works tremendous). You can melt some butter in the pan to cook them in to give them a buttery flavor. Add some vanilla extract and cinnamon for some extra flavor. Want some variety? Try adding some blueberries, chocolate chips or roasted pecans and apples.
