The Perfectly DUNK-ABLE cookie

But is there a such thing, as a perfect cookie? Not really. But I wanted a cookie that I could dip in some yummy almond milk and it didn’t come out half gone. I also wanted a cookie that was not grainy and super sweet, as we are supposed to have 25 grams at most of added sugar per day, but that will be another post in the near future. Being gluten free is not always easy or tasty. I’ve experimented with many different GF flours and none have compared to using almond flour for cookies. The moisture is there; the added sweetness without added sugar is there; the soft but chewy texture is there; and as an added bonus a lower carb good for you treat.

It took me the better part of ten years to come up with this recipe that I literally have to freeze these cookies to have any kind of self-control to not eat six at a time. Yes, they freeze extremely well and are ready to eat in just about 15-30 min after taking them out of the freezer. I started bringing them to parties and putting them out at our own parties. Most people couldn’t tell they were GF. Many liked that they didn’t have a ton of sugar, at 6-7 g per cookie, that ain’t bad at all. You keto-ers, these are a great sweet treat that will not greatly affect your diet either. Each cookie is right around 10g of carbs for the 1 oz cookie and 20 g for the 2 oz..

So go ahead, order a dozen or two, keep ‘em in the freezer and indulge a couple times a week. Happy cookie dunking!
